The charmat method, also known as the tank method, involves conducting the secondary fermentation in a pressurized tank before bottling. This method

 is typically employed for producing sparkling wines that emphasize freshness and fruitiness. It is often used for sparkling wine production in regions such as California's Central Coast and New York's Finger Lakes.
